- 4 very green bananas
- 3 hard boiled eggs
- 1/4 cup mayonnaise
- 1 Tbsp Baron Green Seasoning
- 1/2 tsp Baron West Indian Hot Sauce
- 1/4 cup green pepper, chopped
- 1/4 tsp fresh ground black peppercorns
- 1/4 tsp prepared mustard (optional)
- 1/4 cup onion, chopped
- salt to taste

Amazingly enough, a green banana is similar in flavor and texture to a potato when boiled. This recipe comes from a friend who is our favorite Caribbean Skipper. It is similar to potato salad, yet excitingly different.
Boil bananas (with skins still on) in enough water to cover bananas. Cook until tender (about 30 minutes). Let bananas cool. Mix mayonnaise, Green Seasoning, Hot Sauce, black pepper, mustard, and salt. Peel and chop bananas and eggs, then add to green pepper and onion. Stir mayonnaise mixture into banana mixture. Chill and serve.
